Hilsa Paturi Recipe/Ilish Paturi Recipe
Ingredients:
- Hilsa fish - 6 pcs
- Grated coconut - 4 tbsp
- White mustard - 2 tbsp
- Black mustard - 2 tbsp
- Poppy seeds - 1 tablespoon
- Sour yogurt - 3 tbsp
- Whole green chillies – several
- Turmeric powder
- salt
- Mustard oil
- Banana leaves and thread for wrapping
Instructions:
1. Apply hilsa fish with salt and turmeric.2. Soak mustard seeds and poppy seeds for half an hour before making a paste with a little salt and green chillies.
3. Now mix this paste, curd, grated coconut, salt to taste, turmeric and mustard oil together in a bowl.
4. Now rub the hilsa fish pieces in the paste and leave it to marinate for 10 minutes.
5. Cut the banana leaves into squares, wash them in water, dry them well and fry them lightly on gas flame. It will make the leaves soft. Be careful not to burn the leaves.
6. The paturi should be placed on the opposite side of the leaf, i.e. on the uneven side. So apply oil on the opposite side of the leaf.
7. Put one piece of marinated hilsa fish on a leaf, spread a little paste on the top and bottom, wrap the leaf well with 2 green chillies and tie it with a thread.
8. Heat a pan with 1/2 tbsp oil and cover the fish wrapped in leaves with oil.
9. After 8-10 minutes open the cover and turn it over and keep the other side covered for 8-10 minutes. The leaves will be lightly burnt.
10. Hilsa paturi is ready. When it cools down a bit, serve it with hot rice including threading
